Tasty Tuesday: Healthy Apple Bake



4 apples

1/4 cup unsweetened apple juice or apple cider

1/4 cup brown sugar

2 tablespoons of cornstarch

1/2 tsp. cinnamon

1/2 tsp. nutmeg

1/2 tsp. salt

Cinnamon Yogurt Topping:

2 1/2 cups plain yogurt

1 tbsp. honey

1/4 tsp. cinnamon


Preheat oven to 350 degrees and spray an 8 by 8 pan with non-stick cooking spray. Set aside. Core and thinly slice apples. Place apples in bowl with apple juice.

Mix brown sugar, cornstarch, cinnamon, nutmeg, and salt together in a bowl. sprinkle over apples and mix gently. Pour apples into baking dish and bake for 40 minutes.

For the cinnamon yogurt topping, line a colander with several paper towels and place over a bowl to catch drips. Pour yogurt into colander and allow to drain, refrigerate for about 30 minutes. Spoon yogurt into small bowl and mix with honey and cinnamon.
