Tasty Tuesday: Easy Egg Muffin Melts


4 Eggs, hard boiled, chopped

8 Egg whites, hard boiled, chopped

1 c Cheddar cheese, reduced fat, shredded

½ Cup Mayonnaise, light

1 Tbsp Mustard

½ Tbsp Garlic powder

Dash Hot sauce, optional

6 English muffins, whole wheat, sliced in half

1. Gently FOLD together eggs, egg whites, cheese, mayonnaise, mustard, garlic powder and hot sauce.

2. SPREAD ¼ cup of the egg mixture on each English muffin.

3. BROIL in the oven for 3-5 minutes or until hot and bubbly.
