Tasty Tuesday: Chicken Lettuce Wraps


Chicken Lettuce Wraps

Quick family friendly meal

1 Tbsp olive or sesame oil

1lb ground chicken (can substitute turkey, lean beef, or tofu)

3-4 sprigs green onion, diced

1 red pepper, diced

2-3 cloves garlic crushed and chopped

1 Tbsp ginger paste

2 Tbsp light soy sauce

¼ cup Hoisin

1 small can of sliced water chestnuts, diced

2 cup brown rice

1 head of Butter or iceberg lettuce

Heat oil in pan and brown the ground meat. Remove meat from pan and add the whites of the onion and the rest of ingredients and simmer for 2-3 minutes. Then add meat back to pan and stir for a few minutes. Place 1 spoon of rice and meat on 1 piece of lettuce, top with green onion, and wrap. Enjoy!!

2 Tbsp Almond, sunflower, or Peanut Butter

½ cup of fruit( diced berries, bananas, or peaches)

1 Tbsp of chocolate chips, jelly or honey

Balance out lunch box with veggies and yogurt

1 whole wheat wrap

2 oz low Sodium lunch meat

1 Tbsp Cream cheese


Balance out lunch box with Fruit and Almonds
