Tasty Tuesday: Zucchini Noodle Salad

Zucchini Noodle Salad

1/3 cup Extra Virgin Olive Oil

1/4 cup Lemon Juice

1/4 tsp Red pepper flake

2-3 cloves of garlic crushed

Salt and pepper to taste

3-4 zucchinis (about 2 pounds)

1/2 cup chopped Basil

1/4 cup Toasted Pine Nuts

1 cup of halved grape Tomatoes

3-4 cups of Mixed Greens

3/4 cup Pitted and sliced Olives

1/2 cup Shaved Parmesan Cheese

Mix together oil, lemon juice, red pepper, garlic and S & P and set aside.

Using a vegetable peeler or cheese slicer make ribbons of zucchini. Peel from bottom to top and discard the middle with seeds. Toss with a pinch of salt and put in strainer to drain or soften.

Then toss dressing, zucchini, basil, and tomatoes. Place on top of a bed of lettuce and top with pine nuts, cheese and olives.
