Tasty Tuesday: Summer Salad
It's summer time and that means the perfect time for a yummy light salad packed with nutrients.
Today, Fox 25's Shelby Cashman and Registered Dietician Meghan Van Camp are putting together a bright and colorful salad filled with shrimp, mango, avocado and spinach. It's all covered with a citrus dressing.
Keys Shrimp Salad
1 lb raw Gulf Shrimp, peeled and deveined
1-2 Tbsp Cajun or Jerk Seasoning
½ tsp lime zest
¼ cup Key lime juice
2 Tbsp of Orange Juice
1 tsp salt
½ tsp black pepper
½ cup olive Oil
4-6 cups of spinach
½ Red onion, diced
1 medium Avocado, diced
½ cup pico de gallo or fresh salsa
1-2 Mango, diced
1 cucumber, diced(or jicama, radishes)
Combine shrimp, seasoning, lime zest, and set aside while prepping the rest of the salad.
To make dressing the ingredients lime juice to oil, shake and set aside.
Place small amount of olive oil in hot pan, place shrimp evenly in bottom of pan and cook for 3-4 minutes and flip and cook until no longer translucent.
Let Shrimp cool a little and then arrange on top of salad
