    Ingredients:

    2 lbs unpeeled red potatoes, diced

    1 cup non-fat plain Greek yogurt

    2 Tbsp olive oil mayonnaise

    1 Tbsp apple cider vinegar

    2 Tbsp Dijon mustard

    3 green onions, chopped

    2 ribs celery, diced

    2 Tbsp minced fresh dill

    2 Tbsp minced fresh parsley

    1 tsp onion powder

    1 tsp garlic powder

    Preparation:

    1.In a large stock pot bring water to a boil.

    2.Add potatoes & boil 10 minutes or until they are fork-tender. Drain & set aside to cool.

    3.In a large bowl, add remaining ingredients. Mix well. Add potatoes & toss to combine.

    4.Cover & refrigerate at least 2 hours before serving.
