Tasty Tuesday: One Pan Meal


One Pan Meal- Salmon with potatoes and vegetables

Prep time- 15-20 min

Cook time-30 min

Serves 4


1 lb Salmon

4-5 Tbsp of olive oil(divided)

3 Tbsp of Orange Marmalade

Salt and Pepper (to taste)

2 cups of diced potatoes

4 cups of Brussel sprout, cut in half or quarters

2 Tbsp. of balsamic vinegar

2 Tbsp. of grated parmesan cheese


Preheat oven at 400 degrees. Line large Baking sheet with aluminum foil Pyrex baking dish

Toss diced potatoes in 2 Tbsp. of olive oil, salt and pepper. Once evenly coated place on baking sheet in one layer. Toss Brussel sprouts in 2 Tbsp. of olive oil, salt, pepper, balsamic vinegar, and parmesan cheese. Also place onto baking sheet in a single layer and leaving room for salmon.

Place baking sheet in oven for 15-20 min. Meanwhile, season salmon filet with salt pepper, and lemon juice and cover filet with and even coating of orange marmalade. Place salmon on sheet and back for 10-15 more minutes.
