Tasty Tuesday: Lasagna Spaghetti Squash Bowl

Lasagna Spaghetti Squash Bowl

Prep time- 10-15 minutes

Cook time- 1 hr

Serves 2-4

Ingredients

1 medium spaghetti squash

2 Tbsp. olive oil divided

½ cup diced onion

½ cup diced bell pepper

½ cup diced mushrooms

½ pound Italian sausage, casing removed

½ cup marinara

4 Tbsp. of ricotta cheese

½ cup Italian cheese blend (mozzarella and parmesan)

Fresh basil or parsley to garnish

Directions:

Preheat oven to 375.

Use fork to pierce several holes along the midline of squash. Place squash in microwave and cook for 3 minutes. Cup squash along midline, brush with olive oil and place skin side up onto baking sheet lined with aluminum foil. Bake for 30-45 minute until fork tender

While squash is cooking chop onion, pepper, and mushrooms. Heat 1 Tbsp. of Olive oil in a frying pan. Add vegetables and sausage to pan and cook for 5 minutes or until meat is cooked. Stir in marinara sauce and set aside until squash is ready

Once squash is ready, use a fork to loosen the squash from skin, but leave in the skin. Put 2 dollops of ricotta on each half. Pour in spaghetti sauce and top with cheese and back for 15-20 min or until cheese is melted. Top with fresh herbs and enjoy!!
