Tasty Tuesday: Easy Beets

1 Sweet Potato, large, cubed (3 c)

2 Beets, large, cubed, (4 c)

2 T Olive oil

½ t Allspice

1 T Sugar

½ c Walnuts, toasted, optional

1. PREHEAT the oven to 350°F.

2. PLACE potatoes and beets in a large bowl and TOSS with olive oil, allspice and sugar.

3. PLACE vegetables on a baking sheet sprayed with cooking spray. BAKE uncovered for 35-45 minutes until sweet potatoes are fork tender.

4. TOP with toasted walnuts if desired.

Makes 10 – ½ c servings
