Quinoa, Spinach and Avocado Salad

Ingredients:

? cup rinsed quinoa

1 ? cups water

1 bunch spinach (1 ½ cups)

1 avocado

½ cup chopped cucumber

? cup red pepper strips (just slice them in strips)

¼ cup chopped red onion

¼ cup crumbled feta cheese

¼ cup parmesan shaved

Lemon vinaigrette dressing to taste (I use store bought, because I’m in a hurry)

INSTRUCTIONS

First, we are going to cook the quinoa. When I was first making quinoa, I was intimidated by the cooking - but it’s the easiest thing. Simply bring quinoa in the water to boil in a saucepan. Reduce heat to medium, and simmer, covered, for about 15- 20 minutes (until quinoa is tender). It’s just like pasta. Set aside to cool (if you are in a time crunch, place in the fridge for about 20 minutes while you chop the rest of the ingredients)

Next, we are going to chop the spinach into small, bite size pieces. One of the reasons this salad is so great, is because it doesn’t feel like a salad. We’ll add the chopped cucumber, sliced red pepper, chopped red onion, avocado, and cheeses. Remove the quinoa, toss it into the salad bowl and pour the lemon vinaigrette (or your vinaigrette of choice) over the bowl, stir to coat. Enjoy!
