Tasty Tuesday: Curried Egg Salad Sandwiches

Ingredients:

• 6 hard-boiled eggs

• 2/3 cup plain, non-fat Greek yogurt

• 1/3 cup olive oil mayonnaise

• 1 Tbsp curry powder

• 1 Tbsp ground cumin

• 1/2 cup raisins

• 12 slices 100% whole-wheat sandwich bread, toasted

• 1 medium cucumber, thinly sliced

• 12 romaine lettuce leaves

Preparation:

1. In a large bowl, whisk together mayo, yogurt, curry powder & cumin. Stir in eggs & raisins. Mix well.
